Karē Calzones

Inspired by Isami Aldini's curry bread calzones in season 1 of Food Wars!: Shokugeki no Soma

💠Ingredients💠

  • pizza dough (you will need 2 if you want to use all the sauce)

  • Karē Sauce—see below

  • shredded mozzarella

  • pecorino romano (optional)

  • oregano (optional)

🔹karē sauce🔹

makes enough for 4 regular calzones, or 8 mini calzones

  • 1 28oz can crushed tomatoes

  • 6 cubes Japanese curry roux (1 small box, or 1/2 larger box)

  • 1/8 cup red wine

  • 1/8 cup sake

  • 1 package cremini/baby bella mushrooms, roughly chopped

  • 1 package shiitake mushrooms, roughly chopped

  • 2 cloves garlic, minced (or measure with your heart)

  • 1 carrot, finely chopped

  • 1 celery stalk, finely chopped

  • 1/2 onion, finely chopped (or substitute 1/2 Tbsp onion powder)

  • 2 Tbsp fresh basil

  • spice blend—1/4 tsp ginger, 1/4 tsp cinnamon, 1/8 tsp nutmeg, 1/8 tsp clove, pinch turmeric

  • salt & pepper, to taste

  1. Heat oil in a large saucepan over medium-high head. Sauté garlic until it just starts to brown, then add carrot, celery, and onion. Cook for another couple minutes until it starts to become aromatic, then add mushrooms. Continue sautéing until mushrooms begin to cook down and other vegetables start to soften.
  2. Reduce the heat to medium-low. Add red wine, sake, crushed tomatoes, spice mix, salt, and pepper. Bring to a simmer, then add Japanese curry roux. Stir until the curry roux is dissolved.  Cook at a simmer until thickened, stirring occasionally, for a minimum of half an hour.

  3. Bring pizza dough to room temperature. Cut in half for regular calzones, or in quarters for mini calzones. Reshape into balls and roll out until it’s about 1/4 inch thick.

  4. Add a thick layer of curry sauce, then shredded mozzarella, pecorino romano, and oregano. Transfer to a baking sheet lined with parchment paper. Poke a few small holes in the dough on top of the calzones.

  5. Bake at 425°F (220°C) until crisp and golden, about 25-35 minutes.
